Schwarzer Knoblauch entsteht aus gewöhnlichem Knoblauch (Allium sativum) durch mehrwöchige kontrollierte Reifung. Dabei bildet sich die geruchsneutrale Schwefelverbindung S-Allylcystein. Unser Bio-Extrakt liefert 750 mg mit 0,75 mg S-Allylcystein pro Kapsel.

Wie wirkt schwarzer Knoblauch?

Charakteristisch ist die Umwandlung der scharfen Schwefelverbindungen des Frischknoblauchs in wasserlösliche Verbindungen wie S-Allylcystein. Die Reifung erhöht zudem den Gehalt an Polyphenolen und Flavonoiden gegenüber dem Ausgangsmaterial.

Riecht schwarzer Knoblauch?

Nein. Bei der Reifung werden die flüchtigen Schwefelverbindungen umgewandelt, die für die typische Knoblauchfahne verantwortlich sind. Schwarzer Knoblauch gilt daher als geruchsneutral.
