Was passiert bei der Reifung von schwarzem Knoblauch?

Über Wochen bei kontrollierter Wärme und Feuchte laufen Maillard-Reaktionen zwischen Zuckern und Aminosäuren ab. Die Knolle wird dunkel, weich und süßlich. Parallel entsteht S-Allylcystein, eine stabile, geruchsneutrale Schwefelverbindung.

Warum riecht schwarzer Knoblauch nicht?

Für den Knoblauchgeruch ist Allicin verantwortlich, das erst beim Zerschneiden aus Alliin entsteht. Bei der Reifung wird dieser Weg nicht durchlaufen - stattdessen bilden sich wasserlösliche, geruchsneutrale Verbindungen wie S-Allylcystein.

Beweist die dunkle Farbe die Reifung?

Nein. Eine dunkle Färbung lässt sich auch durch kurze Hitzebehandlung erzeugen, ohne dass nennenswert S-Allylcystein gebildet wurde. Nur der bezifferte SAC-Gehalt belegt eine echte, ausreichend lange Reifung.

Was ist der Unterschied zur 750-mg-Variante?

Diese Ausführung liefert 600 mg Extrakt mit 0,6 mg SAC und kommt ohne Leinsamenmehl aus. Die 750-mg-Variante liefert entsprechend mehr Extrakt und 0,75 mg SAC, enthält aber Leinsamenmehl als Trennmittel.

Wann sollte man schwarzen Knoblauch einnehmen?

Empfohlen ist 1 Kapsel mit ausreichend Flüssigkeit zu einer Mahlzeit. Ein fester Zeitpunkt ist nicht erforderlich.

Wie lange kann man schwarzen Knoblauch einnehmen?

Der Extrakt eignet sich für eine längerfristige Anwendung. Unsere Packung mit 180 Kapseln deckt sechs Monate ab.

Sind die Inhaltsstoffe natürlich?
